Ingredients

  • Paneer (Indian cottage cheese) - 50 grams, grated
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, finely chopped
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 3 tablespoons
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Onion - 1/2, sliced

Steps

  1. In a mixing bowl, combine the mixed vegetables, mashed potato, grated paneer, chopped coriander, ginger, garlic, and green chili.
  2. Add cumin powder, garam masala, salt, and black pepper to the vegetable mixture and mix well until all ingredients are evenly combined.
  3. Gradually add breadcrumbs to the mixture until it holds together well. Form the mixture into two patties.
  4. Heat olive oil in a non-stick pan over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
  5. While the patties are cooking, lightly toast the burger buns on a separate pan until golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and onion. Top with the other half of the bun.
  7. Serve immediately with your choice of sauce or chutney.
