Ingredients

  • Whole wheat tortillas - 2
  • Carrot, grated - 50 grams
  • Cabbage, finely chopped - 50 grams
  • Bell pepper, finely chopped - 50 grams
  • Onion, finely chopped - 30 grams
  • Green peas, boiled - 30 grams
  • Ginger-garlic paste - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a pan, heat the oil over medium heat and add cumin seeds. Once they splutter, add chopped onion and sauté until translucent.
  2. Add ginger-garlic paste and sauté for another minute until fragrant.
  3. Stir in grated carrot, chopped cabbage, bell pepper, and boiled green peas. Cook for 5-7 minutes until the vegetables are tender.
  4. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for another 2 minutes.
  5. Remove from heat, add chopped coriander leaves and lemon juice. Mix well and let the filling cool slightly.
  6. Place a whole wheat tortilla on a flat surface, spoon a portion of the vegetable filling onto one side, and roll it tightly.
  7. Repeat with the second tortilla and filling.
  8. Optionally, grill the rolls on a pan for 2-3 minutes on each side until slightly crispy.
  9. Slice the rolls in half and serve hot with your favorite chutney or sauce.
