Vegetable Rolls

Ingredients
- Whole wheat tortillas - 2
- Carrot, grated - 50 grams
- Cabbage, finely chopped - 50 grams
- Bell pepper, finely chopped - 50 grams
- Onion, finely chopped - 30 grams
- Green peas, boiled - 30 grams
- Ginger-garlic paste - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/4 teaspoon
- Salt - to taste
- Oil - 1 tablespoon
- Fresh coriander leaves, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a pan, heat the oil over medium heat and add cumin seeds. Once they splutter, add chopped onion and sauté until translucent.
- Add ginger-garlic paste and sauté for another minute until fragrant.
- Stir in grated carrot, chopped cabbage, bell pepper, and boiled green peas. Cook for 5-7 minutes until the vegetables are tender.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for another 2 minutes.
- Remove from heat, add chopped coriander leaves and lemon juice. Mix well and let the filling cool slightly.
- Place a whole wheat tortilla on a flat surface, spoon a portion of the vegetable filling onto one side, and roll it tightly.
- Repeat with the second tortilla and filling.
- Optionally, grill the rolls on a pan for 2-3 minutes on each side until slightly crispy.
- Slice the rolls in half and serve hot with your favorite chutney or sauce.
