Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Greek yogurt - 1 cup
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, grated
  • Green bell pepper - 1/2 medium, diced
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under running water until the water runs clear, then soak it in water for 15 minutes.
  2. In a saucepan, bring 2 cups of water to a boil, add the soaked rice, and cook on medium heat for about 15 minutes or until the rice is tender and water is absorbed.
  3. Once cooked, fluff the rice with a fork and set aside to cool slightly.
  4. In a mixing bowl, combine the Greek yogurt, diced cucumber, diced tomato, grated carrot, diced green bell pepper, chopped coriander leaves, cumin powder, salt, black pepper, olive oil, and lemon juice. Mix well until all ingredients are incorporated.
  5. In serving bowls, layer the rice and top generously with the vegetable raita mixture.
  6. Garnish with additional coriander leaves if desired and serve immediately.
