Vegetable Puttu

Vegetable Puttu is a traditional South Indian dish made from steamed rice and coconut layered with a colorful mix of vegetables. This dairy-free supper is light yet filling, perfect for a nutritious dinner.

Ingredients

  • Rice flour - 200 grams
  • Grated coconut - 100 grams
  • Mixed vegetables (carrots, peas, beans) - 150 grams, finely chopped
  • Water - 250 ml
  • Salt - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 8-10 leaves
  • Oil - 1 tablespoon
  • Turmeric powder - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the rice flour and salt. Gradually add water while mixing until it reaches a crumbly texture.
  2. In a separate pan, heat oil over medium heat, add mustard seeds and let them splutter. Then add curry leaves and chopped mixed vegetables. Sauté for 5-7 minutes until soft.
  3. Add turmeric powder to the vegetables, mix well and remove from heat.
  4. Take a steamer or idli maker and layer it with a little grated coconut at the bottom. Then add a layer of the rice flour mixture, followed by a layer of the vegetable mixture, and repeat until all ingredients are used, finishing with coconut on top.
  5. Steam the puttu for about 20-25 minutes until cooked through. Allow it to cool slightly before serving.
  6. To serve, gently remove the puttu from the steamer and serve it warm, paired with coconut chutney or a side salad.
