Ingredients

  • Whole wheat flour - 200 grams
  • Water - 100 ml (adjust as needed)
  • Salt - 1/2 teaspoon
  • Oil - 1 tablespoon (for dough) + Oil - for frying
  • Carrot - 1 medium, finely chopped
  • Green peas - 100 grams, cooked
  • Potato - 1 medium, boiled and mashed
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Green chili - 1, finely chopped (optional)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 teaspoon

Steps

  1. In a mixing bowl, combine whole wheat flour, salt, and 1 tablespoon of oil. Gradually add water and knead into a smooth dough. Cover and let it rest for 20 minutes.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped carrots, cooked green peas, and mashed potato to the pan. Stir well and cook for about 5 minutes.
  4. Add turmeric powder, coriander powder, garam masala, chopped green chili, and salt to taste. Mix well and cook for another 3-4 minutes. Remove from heat and stir in chopped coriander leaves and lemon juice. Let the mixture cool.
  5. Divide the rested dough into small balls. Roll each ball into a small circle using a rolling pin.
  6. Place a spoonful of the vegetable mixture in the center of each circle, fold over, and seal the edges by pinching them together.
  7. Roll the stuffed dough gently to flatten it slightly, being careful not to break the seal.
  8. In a deep frying pan, heat enough oil for deep frying over medium heat. Once hot, carefully slide in the stuffed puris one at a time.
  9. Fry until they puff up and turn golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  10. Serve hot with your choice of chutney or salad.
