Vegetable Puri

Ingredients
- Whole wheat flour - 200 grams
- Water - 100 ml (adjust as needed)
- Salt - 1/2 teaspoon
- Oil - 1 tablespoon (for dough) + Oil - for frying
- Carrot - 1 medium, finely chopped
- Green peas - 100 grams, cooked
- Potato - 1 medium, boiled and mashed
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1/2 teaspoon
- Garam masala - 1/4 teaspoon
- Green chili - 1, finely chopped (optional)
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 teaspoon
Steps
- In a mixing bowl, combine whole wheat flour, salt, and 1 tablespoon of oil. Gradually add water and knead into a smooth dough. Cover and let it rest for 20 minutes.
- In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped carrots, cooked green peas, and mashed potato to the pan. Stir well and cook for about 5 minutes.
- Add turmeric powder, coriander powder, garam masala, chopped green chili, and salt to taste. Mix well and cook for another 3-4 minutes. Remove from heat and stir in chopped coriander leaves and lemon juice. Let the mixture cool.
- Divide the rested dough into small balls. Roll each ball into a small circle using a rolling pin.
- Place a spoonful of the vegetable mixture in the center of each circle, fold over, and seal the edges by pinching them together.
- Roll the stuffed dough gently to flatten it slightly, being careful not to break the seal.
- In a deep frying pan, heat enough oil for deep frying over medium heat. Once hot, carefully slide in the stuffed puris one at a time.
- Fry until they puff up and turn golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
- Serve hot with your choice of chutney or salad.
