Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Mixed vegetables (carrots, peas, bell peppers) - 1 cup, diced
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Bay leaf - 1
  • Cinnamon stick - 1 inch
  • Oil (coconut or vegetable) - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. Heat oil in a pot over medium heat and add cumin seeds, bay leaf, and cinnamon stick. Sauté for 1-2 minutes until aromatic.
  3. Add the sliced onions and sauté until golden brown, about 5-7 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the diced mixed vegetables to the pot and sauté for about 3-4 minutes until they start to soften.
  6. Sprinkle in the coriander powder, turmeric powder, and garam masala, stirring well to coat the vegetables.
  7. Drain the soaked rice and add it to the pot, mixing gently to combine with the vegetables and spices.
  8. Pour in the water, season with salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
  9. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh coriander leaves and serve hot in bowls.
