- Mixed vegetables (carrots, peas, bell peppers) - 1 cup, diced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Bay leaf - 1
- Cinnamon stick - 1 inch
- Oil (coconut or vegetable) - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- Heat oil in a pot over medium heat and add cumin seeds, bay leaf, and cinnamon stick. Sauté for 1-2 minutes until aromatic.
- Add the sliced onions and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced mixed vegetables to the pot and sauté for about 3-4 minutes until they start to soften.
- Sprinkle in the coriander powder, turmeric powder, and garam masala, stirring well to coat the vegetables.
- Drain the soaked rice and add it to the pot, mixing gently to combine with the vegetables and spices.
- Pour in the water, season with salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh coriander leaves and serve hot in bowls.
