Ingredients

  • Basmati rice - 1 cup
  • Mixed vegetables (carrots, peas, beans) - 1/2 cup
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Green chili - 1, finely chopped
  • Cilantro - 2 tbsp, chopped
  • Cumin seeds - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tsp
  • Bread crumbs - 1/2 cup
  • All-purpose flour - 2 tbsp
  • Oil - for frying

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion, garlic, ginger, and green chili. Sauté until the onions are translucent.
  4. Stir in the mixed vegetables, turmeric powder, garam masala, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.
  5. Drain the soaked rice and add it to the pot along with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
  6. Once cooked, fluff the rice with a fork and let it cool slightly. Stir in the lemon juice and chopped cilantro.
  7. Shape the cooled rice mixture into small balls. Roll each ball in all-purpose flour, then coat with bread crumbs.
  8. In a frying pan, heat oil over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side.
  9. Remove the balls from the pan and drain on paper towels. Serve hot with your favorite chutney or sauce.
