- Flattened rice (poha) - 1 cup
- Onion - 1 medium, finely chopped
- Green peas - 1/2 cup, fresh or frozen
- Carrot - 1 small, finely chopped
- Potato - 1 small, diced
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chili - 1, slit
- Curry leaves - 8-10 leaves
- Salt - to taste
- Oil - 2 tablespoons
- Coriander leaves - for garnish, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the flattened rice (poha) under cold water in a sieve until it softens, then drain and set aside.
- In a pan, heat the oil over medium heat, and add the mustard seeds. Once they start to splutter, add the curry leaves and slit green chili.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the diced potatoes and cook for about 5 minutes until they are slightly tender.
- Add the chopped carrot and green peas, cooking for another 3-4 minutes until all the vegetables are tender.
- Sprinkle in the turmeric powder and salt, mixing well to combine all ingredients.
- Gently fold in the softened poha, mixing thoroughly to combine with the vegetables and spices. Cook for an additional 2-3 minutes.
- Remove from heat, add lemon juice, and garnish with chopped coriander leaves before serving.
