Ingredients

  • Flattened rice (poha) - 1 cup
  • Onion - 1 medium, finely chopped
  • Green peas - 1/2 cup, fresh or frozen
  • Carrot - 1 small, finely chopped
  • Potato - 1 small, diced
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Green chili - 1, slit
  • Curry leaves - 8-10 leaves
  • Salt - to taste
  • Oil - 2 tablespoons
  • Coriander leaves - for garnish, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the flattened rice (poha) under cold water in a sieve until it softens, then drain and set aside.
  2. In a pan, heat the oil over medium heat, and add the mustard seeds. Once they start to splutter, add the curry leaves and slit green chili.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the diced potatoes and cook for about 5 minutes until they are slightly tender.
  5. Add the chopped carrot and green peas, cooking for another 3-4 minutes until all the vegetables are tender.
  6. Sprinkle in the turmeric powder and salt, mixing well to combine all ingredients.
  7. Gently fold in the softened poha, mixing thoroughly to combine with the vegetables and spices. Cook for an additional 2-3 minutes.
  8. Remove from heat, add lemon juice, and garnish with chopped coriander leaves before serving.
