Ingredients

  • Gram flour (besan) - 100 grams
  • Mixed vegetables (carrot, bell pepper, green beans) - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander powder - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Cilantro - a handful, chopped
  • Oil - 2 tablespoons
  • Water - 500 ml

Steps

  1. Heat oil in a pan over medium heat and add mustard seeds. Once they start to crackle, add cumin seeds.
  2. Add chopped onions and sauté until they are translucent.
  3. Stir in ginger and garlic paste, cooking for another minute until fragrant.
  4. Add chopped tomatoes and cook until they soften.
  5. Mix in the chopped mixed vegetables and sauté for 5-7 minutes until they are slightly tender.
  6. In a bowl, mix the gram flour with turmeric, red chili powder, coriander powder, and salt. Gradually add water to make a smooth batter.
  7. Pour the gram flour mixture into the pan with the vegetables, stirring continuously to avoid lumps.
  8. Cook for 10-15 minutes on low heat, adding more water if necessary to reach a desired consistency.
  9. Once cooked, garnish with freshly chopped cilantro and serve hot.
