- Gram flour (besan) - 100 grams
- Mixed vegetables (carrot, bell pepper, green beans) - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Coriander powder - 1 teaspoon
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Cilantro - a handful, chopped
- Oil - 2 tablespoons
- Water - 500 ml
Steps
- Heat oil in a pan over medium heat and add mustard seeds. Once they start to crackle, add cumin seeds.
- Add chopped onions and sauté until they are translucent.
- Stir in ginger and garlic paste, cooking for another minute until fragrant.
- Add chopped tomatoes and cook until they soften.
- Mix in the chopped mixed vegetables and sauté for 5-7 minutes until they are slightly tender.
- In a bowl, mix the gram flour with turmeric, red chili powder, coriander powder, and salt. Gradually add water to make a smooth batter.
- Pour the gram flour mixture into the pan with the vegetables, stirring continuously to avoid lumps.
- Cook for 10-15 minutes on low heat, adding more water if necessary to reach a desired consistency.
- Once cooked, garnish with freshly chopped cilantro and serve hot.
