- Rice flour - 1 cup
- Water - 1/2 cup
- Salt - 1/2 tsp
- Cabbage - 1/2 cup, finely chopped
- Carrot - 1/2 cup, grated
- Green peas - 1/4 cup
- Onion - 1 small, finely chopped
- Ginger - 1 tsp, grated
- Green chili - 1, finely chopped
- Coriander leaves - 2 tbsp, chopped
- Turmeric powder - 1/4 tsp
- Cumin seeds - 1/2 tsp
- Oil - 1 tbsp for sautéing
- Ghee or oil - for greasing
Steps
- In a mixing bowl, combine the rice flour, salt, and water to form a smooth dough. Cover with a damp cloth and set aside.
- Heat oil in a pan over medium heat, add cumin seeds, and let them splutter.
- Add chopped onions and sauté until they turn translucent, then add grated ginger and green chili, cooking for another minute.
- Stir in the chopped cabbage, grated carrot, and green peas. Add turmeric powder, mix well, and cook for about 5-7 minutes until vegetables are soft.
- Remove from heat, add chopped coriander leaves, and set the filling aside to cool.
- Divide the dough into small balls. Flatten each ball into a small disc using your fingers or a rolling pin.
- Place a spoonful of the vegetable filling in the center of each disc, then fold the edges over to form a half-moon shape, sealing the edges tightly.
- Grease a steamer or a plate and arrange the pithas in it. Steam for about 15-20 minutes until they are cooked through.
- Serve hot with chutney or a dipping sauce of your choice.
