Ingredients

  • Rice flour - 1 cup
  • Water - 1/2 cup
  • Salt - 1/2 tsp
  • Cabbage - 1/2 cup, finely chopped
  • Carrot - 1/2 cup, grated
  • Green peas - 1/4 cup
  • Onion - 1 small, finely chopped
  • Ginger - 1 tsp, grated
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tbsp, chopped
  • Turmeric powder - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Oil - 1 tbsp for sautéing
  • Ghee or oil - for greasing

Steps

  1. In a mixing bowl, combine the rice flour, salt, and water to form a smooth dough. Cover with a damp cloth and set aside.
  2. Heat oil in a pan over medium heat, add cumin seeds, and let them splutter.
  3. Add chopped onions and sauté until they turn translucent, then add grated ginger and green chili, cooking for another minute.
  4. Stir in the chopped cabbage, grated carrot, and green peas. Add turmeric powder, mix well, and cook for about 5-7 minutes until vegetables are soft.
  5. Remove from heat, add chopped coriander leaves, and set the filling aside to cool.
  6. Divide the dough into small balls. Flatten each ball into a small disc using your fingers or a rolling pin.
  7. Place a spoonful of the vegetable filling in the center of each disc, then fold the edges over to form a half-moon shape, sealing the edges tightly.
  8. Grease a steamer or a plate and arrange the pithas in it. Steam for about 15-20 minutes until they are cooked through.
  9. Serve hot with chutney or a dipping sauce of your choice.
