Ingredients

  • Potatoes - 200 grams
  • Carrots - 100 grams
  • Green peas - 100 grams
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Green chilies - 1, finely chopped
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Whole wheat flour - 100 grams (for the crust)
  • Water - 4 tablespoons (for dough)
  • Olive oil - 1 tablespoon (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Boil the potatoes and carrots until tender, about 15 minutes. Drain and mash them in a bowl.
  3. In a pan, heat a little oil and sauté the chopped onions until translucent. Add grated ginger and chopped green chilies, and sauté for another minute.
  4. Add green peas, coriander powder, cumin powder, turmeric powder, garam masala, and salt to the pan. Cook for 3-4 minutes until the peas are tender. Mix this with the mashed potatoes and carrots, then stir in chopped coriander leaves.
  5. In a separate bowl, combine whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Cover and let it rest for 10 minutes.
  6. Divide the dough into equal portions. Roll each portion into a circle about 1/4 inch thick.
  7. Place a spoonful of the vegetable filling in the center of each rolled dough circle. Fold over and seal the edges tightly to form a pattice.
  8. Place the pattice on a baking sheet lined with parchment paper. Brush the tops with olive oil.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown, flipping halfway through for even cooking.
  10. Remove from the oven and let cool slightly before serving.
