- Potatoes - 200 grams
- Carrots - 100 grams
- Green peas - 100 grams
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Green chilies - 1, finely chopped
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Whole wheat flour - 100 grams (for the crust)
- Water - 4 tablespoons (for dough)
- Olive oil - 1 tablespoon (for brushing)
Steps
- Preheat the oven to 200°C (400°F).
- Boil the potatoes and carrots until tender, about 15 minutes. Drain and mash them in a bowl.
- In a pan, heat a little oil and sauté the chopped onions until translucent. Add grated ginger and chopped green chilies, and sauté for another minute.
- Add green peas, coriander powder, cumin powder, turmeric powder, garam masala, and salt to the pan. Cook for 3-4 minutes until the peas are tender. Mix this with the mashed potatoes and carrots, then stir in chopped coriander leaves.
- In a separate bowl, combine whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Cover and let it rest for 10 minutes.
- Divide the dough into equal portions. Roll each portion into a circle about 1/4 inch thick.
- Place a spoonful of the vegetable filling in the center of each rolled dough circle. Fold over and seal the edges tightly to form a pattice.
- Place the pattice on a baking sheet lined with parchment paper. Brush the tops with olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown, flipping halfway through for even cooking.
- Remove from the oven and let cool slightly before serving.
