- Salt - 1/2 teaspoon
- Water - 1/2 cup (for dough)
- Oil - for frying
- Potato - 1 medium, boiled and mashed
- Green peas - 1/4 cup, boiled
- Onion - 1 small, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Chaat masala - 1 teaspoon
- Lemon juice - 1 tablespoon
- Pani (spiced water) - 1 cup
- Cumin powder - 1/2 teaspoon
- Black salt - 1/4 teaspoon
Steps
- In a bowl, mix semolina, all-purpose flour, baking soda, and salt. Gradually add water to form a stiff dough.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Meanwhile, prepare the filling by mixing mashed potato, boiled peas, chopped onion, coriander leaves, chaat masala, lemon juice, cumin powder, and black salt in a bowl.
- After resting, knead the dough for a minute and divide it into small balls.
- Roll each ball into a thin circle (about 2 inches in diameter) on a floured surface.
- Heat oil in a deep frying pan over medium heat. Fry the puris until they puff up and turn golden brown. Remove and drain on paper towels.
- To serve, take a puri, crack the top gently, and fill it with the vegetable mixture. Dip in the spicy pani and enjoy!
