Ingredients

  • Chickpea flour - 100 grams
  • Rice flour - 25 grams
  • Water - 150 ml
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Baking soda - 1/4 teaspoon
  • Mixed vegetables (potato, onion, spinach, cauliflower) - 200 grams
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil for deep frying - 500 ml

Steps

  1. In a mixing bowl, combine the chickpea flour, rice flour, salt, turmeric powder, red chili powder, cumin seeds, and baking soda.
  2. Gradually add water to the dry ingredients, whisking until you achieve a smooth batter.
  3. Add the chopped mixed vegetables and coriander leaves to the batter, ensuring all pieces are well coated.
  4. Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  5. Carefully drop spoonfuls of the batter-coated vegetables into the hot oil, frying in batches to avoid overcrowding.
  6. Fry the pakodas until they are golden brown and crispy, about 4-5 minutes per batch.
  7. Use a slotted spoon to remove the pakodas from the oil and drain them on paper towels to remove excess oil.
  8. Serve hot with mint chutney or tamarind sauce.
