- Water - 150 ml

- Red chili powder - 1 teaspoon

- Baking soda - 1/4 teaspoon
- Mixed vegetables (potato, onion, spinach, cauliflower) - 200 grams
- Fresh coriander leaves - 2 tablespoons, chopped
- Oil for deep frying - 500 ml
Steps
- In a mixing bowl, combine the chickpea flour, rice flour, salt, turmeric powder, red chili powder, cumin seeds, and baking soda.
- Gradually add water to the dry ingredients, whisking until you achieve a smooth batter.
- Add the chopped mixed vegetables and coriander leaves to the batter, ensuring all pieces are well coated.
- Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Carefully drop spoonfuls of the batter-coated vegetables into the hot oil, frying in batches to avoid overcrowding.
- Fry the pakodas until they are golden brown and crispy, about 4-5 minutes per batch.
- Use a slotted spoon to remove the pakodas from the oil and drain them on paper towels to remove excess oil.
- Serve hot with mint chutney or tamarind sauce.
