Ingredients

  • Whole wheat noodles - 120 grams

  • Bell pepper (any color) - 1 medium, sliced
  • Zucchini - 1 medium, julienned
  • Green beans - 50 grams, chopped
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Olive oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped

Steps

  1. Cook the whole wheat noodles according to package instructions, drain, and set aside.
  2. In a large pan, heat olive oil over medium heat.
  3. Add sliced onions, minced garlic, and grated ginger to the pan, sautéing until the onions turn translucent.
  4. Stir in the turmeric and cumin powder, cooking for another minute to release the spices' aromas.
  5. Add the julienned carrots, bell peppers, zucchini, and chopped green beans to the pan, cooking for 5-7 minutes until the vegetables are tender but still crisp.
  6. Pour in the soy sauce, and add the cooked noodles to the pan, tossing everything together until well combined.
  7. Season with salt and black pepper to taste, and cook for an additional 2-3 minutes.
  8. Garnish with chopped coriander leaves before serving.
