- Green beans - 50 grams, chopped
- Onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Olive oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
Steps
- Cook the whole wheat noodles according to package instructions, drain, and set aside.
- In a large pan, heat olive oil over medium heat.
- Add sliced onions, minced garlic, and grated ginger to the pan, sautéing until the onions turn translucent.
- Stir in the turmeric and cumin powder, cooking for another minute to release the spices' aromas.
- Add the julienned carrots, bell peppers, zucchini, and chopped green beans to the pan, cooking for 5-7 minutes until the vegetables are tender but still crisp.
- Pour in the soy sauce, and add the cooked noodles to the pan, tossing everything together until well combined.
