Ingredients

  • Mixed vegetables (carrots, potatoes, peas, and bell peppers) - 300 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Tomato - 1 medium, pureed
  • Vegetable oil - 2 tablespoons
  • Nihari spice mix (or garam masala) - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Water - 500 ml
  • Cilantro - for garnish
  • Lemon - 1, cut into wedges

Steps

  1. Heat vegetable oil in a pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the ginger-garlic paste and sauté for another 1-2 minutes until fragrant.
  3. Stir in the pureed tomato and cook until the oil separates from the mixture.
  4. Add the mixed vegetables and sauté for about 5 minutes to coat them in the spices.
  5. Sprinkle in the nihari spice mix, turmeric powder, red chili powder, and salt. Stir well to combine.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover, and let it simmer for 25-30 minutes until the vegetables are tender.
  7. Once cooked, taste and adjust seasoning if necessary. Garnish with chopped cilantro and serve with lemon wedges.
