Ingredients
- Mixed vegetables (carrots, potatoes, peas, and bell peppers) - 300 grams
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Tomato - 1 medium, pureed
- Vegetable oil - 2 tablespoons
- Nihari spice mix (or garam masala) - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Water - 500 ml
- Cilantro - for garnish
- Lemon - 1, cut into wedges
Steps
- Heat vegetable oil in a pot over medium heat. Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another 1-2 minutes until fragrant.
- Stir in the pureed tomato and cook until the oil separates from the mixture.
- Add the mixed vegetables and sauté for about 5 minutes to coat them in the spices.
- Sprinkle in the nihari spice mix, turmeric powder, red chili powder, and salt. Stir well to combine.
- Pour in the water and bring to a boil. Reduce the heat to low, cover, and let it simmer for 25-30 minutes until the vegetables are tender.
- Once cooked, taste and adjust seasoning if necessary. Garnish with chopped cilantro and serve with lemon wedges.
