Ingredients

  • Lasagna sheets - 6 sheets
  • Paneer - 200 grams, crumbled
  • Spinach - 100 grams, chopped
  • Carrot - 1 medium, grated
  • Bell pepper - 1 small, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Ginger - 1 tsp, grated
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala - 1 tsp
  • Red chili powder - 1/2 tsp
  • Salt - to taste
  • Olive oil - 2 tbsp
  • Fresh coriander - for garnish
  • Cheddar cheese - 50 grams, grated (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat. Add chopped onions, ginger, and garlic, sautéing until onions are translucent.
  3. Add grated carrot, diced bell pepper, and chopped spinach to the pan. Cook for about 5 minutes until vegetables are tender.
  4. Stir in the pureed tomato, cumin powder, turmeric powder, garam masala, red chili powder, and salt. Cook for another 5-7 minutes until the mixture thickens. Remove from heat.
  5. In a baking dish, spread a thin layer of the vegetable mixture at the bottom. Place 2 lasagna sheets over it.
  6. Layer half of the crumbled paneer over the lasagna sheets, followed by a layer of the vegetable mixture. Repeat the layers once more, finishing with a layer of lasagna sheets.
  7. Spread any remaining vegetable mixture on top of the final layer of lasagna sheets. If using, sprinkle grated cheddar cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  10. Once done, let it cool for a few minutes, garnish with fresh coriander, and serve hot.
