Ingredients
- Lasagna sheets - 6 sheets
- Paneer - 200 grams, crumbled
- Spinach - 100 grams, chopped
- Carrot - 1 medium, grated
- Bell pepper - 1 small, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 large, pureed
- Ginger - 1 tsp, grated
- Garlic - 2 cloves, minced
- Cumin powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1 tsp
- Red chili powder - 1/2 tsp
- Salt - to taste
- Olive oil - 2 tbsp
- Fresh coriander - for garnish
- Cheddar cheese - 50 grams, grated (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat olive oil over medium heat. Add chopped onions, ginger, and garlic, sautéing until onions are translucent.
- Add grated carrot, diced bell pepper, and chopped spinach to the pan. Cook for about 5 minutes until vegetables are tender.
- Stir in the pureed tomato, cumin powder, turmeric powder, garam masala, red chili powder, and salt. Cook for another 5-7 minutes until the mixture thickens. Remove from heat.
- In a baking dish, spread a thin layer of the vegetable mixture at the bottom. Place 2 lasagna sheets over it.
- Layer half of the crumbled paneer over the lasagna sheets, followed by a layer of the vegetable mixture. Repeat the layers once more, finishing with a layer of lasagna sheets.
- Spread any remaining vegetable mixture on top of the final layer of lasagna sheets. If using, sprinkle grated cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
- Once done, let it cool for a few minutes, garnish with fresh coriander, and serve hot.
