Ingredients

  • Cucumber - 100 grams, diced
  • Tomato - 100 grams, diced
  • Carrot - 50 grams, grated
  • Onion - 50 grams, finely chopped
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Green chili - 1, finely chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black mustard seeds - 1 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the diced cucumber, diced tomato, grated carrot, finely chopped onion, and green chili.
  2. Add the chopped fresh coriander leaves to the vegetable mixture.
  3. In a small pan, heat the olive oil over medium heat and add the black mustard seeds.
  4. Once the mustard seeds start to splutter, remove the pan from heat and let it cool slightly.
  5. Pour the mustard seed oil over the vegetables in the bowl.
  6. Add lemon juice and salt to the mixture, and toss everything together gently until well combined.
  7. Let the Koshimbir sit for about 5 minutes to allow the flavors to meld before serving.
