Ingredients

  • Cauliflower florets - 150 grams
  • Carrot - 1 medium, diced
  • Green peas - 100 grams
  • Potato - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Coconut milk - 200 ml
  • Vegetable oil - 2 tablespoons
  • Curry powder - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Basmati rice - 150 grams
  • Naan (dairy-free) - 2 pieces

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sputter.
  3. Add the chopped onion, garlic, and ginger to the pan, sautéing until the onion turns golden brown.
  4. Stir in the diced potato, carrot, and cauliflower florets. Cook for about 5 minutes, stirring occasionally.
  5. Add the green peas and bell pepper, followed by curry powder, turmeric, salt, and black pepper. Mix well to coat the vegetables in spices.
  6. Pour in the coconut milk, cover the pan, and let it simmer for 15 minutes until the vegetables are tender.
  7. While the korma is simmering, cook the soaked basmati rice. In a pot, add the soaked rice with 300 ml of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes or until all water is absorbed.
  8. Once the korma is ready, garnish it with chopped cilantro.
  9. Serve the vegetable korma hot alongside the fluffy basmati rice and warm naan.
