- Basmati rice - 1 cup
- Mixed vegetables (carrots, peas, beans) - 1.5 cups
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Korma curry paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - to taste
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Add the minced garlic and grated ginger to the pot, cooking for another 1-2 minutes until fragrant.
- Stir in the korma curry paste, coriander powder, cumin powder, turmeric, and salt. Cook for 2-3 minutes, stirring frequently.
- Add the mixed vegetables and sauté for another 5 minutes until they begin to soften.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the drained basmati rice to the pot. Stir well to combine all ingredients.
- Cover the pot and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh cilantro before serving.
