Ingredients

  • Basmati rice - 1 cup
  • Mixed vegetables (carrots, peas, beans) - 1.5 cups
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Korma curry paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Add the minced garlic and grated ginger to the pot, cooking for another 1-2 minutes until fragrant.
  4. Stir in the korma curry paste, coriander powder, cumin powder, turmeric, and salt. Cook for 2-3 minutes, stirring frequently.
  5. Add the mixed vegetables and sauté for another 5 minutes until they begin to soften.
  6. Pour in the coconut milk and bring the mixture to a gentle simmer.
  7. Add the drained basmati rice to the pot. Stir well to combine all ingredients.
  8. Cover the pot and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
  9. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  10. Garnish with fresh cilantro before serving.
