  • Pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped

  • Ginger - 1 tablespoon, grated
  • Mixed bell peppers - 100 grams, diced
  • Carrot - 1 small, diced
  • Green peas - 50 grams
  • Cauliflower florets - 100 grams
  • Coconut milk - 100 ml
  • Korma paste - 2 tablespoons
  • Salt - to taste
  • Fresh coriander - for garnish
  • Shredded mozzarella cheese - 100 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat olive oil over medium heat and add the chopped onion. Sauté until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the diced bell peppers, carrot, green peas, and cauliflower florets. Cook for about 5-7 minutes until the vegetables are slightly tender.
  5. Add the korma paste and coconut milk to the vegetable mixture, stirring well. Simmer for 5 minutes until it thickens slightly. Season with salt to taste.
  6. Roll out the pizza dough on a floured surface to your desired thickness.
  7. Transfer the rolled dough to a baking tray or pizza stone.
  8. Spread the korma vegetable mixture evenly over the pizza base.
  9. Sprinkle the shredded mozzarella cheese generously on top of the korma mixture.
  10. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  11. Once done, remove from the oven and garnish with fresh coriander before slicing and serving.
