  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat vegetable oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add diced carrots, red bell pepper, and chopped cauliflower. Sauté for about 5-7 minutes until the vegetables begin to soften.
  5. Mix in coriander powder, turmeric powder, and garam masala. Cook for another 2 minutes to toast the spices.
  6. Add the cooked chickpeas and green peas, stirring well to combine.
  7. Pour in the coconut milk and ground almonds, stirring to create a creamy sauce. Season with salt to taste.
  8. Bring the mixture to a simmer, cover, and cook for 10-15 minutes until the vegetables are tender.
  9. Garnish with fresh cilantro before serving.
