Ingredients
- Mixed vegetables (carrots, peas, potatoes) - 200 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 1 tablespoon
- Coconut milk - 100 ml
- Plain yogurt - 50 grams
- Breadcrumbs - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Burger buns - 2
- Oil - 2 tablespoons for frying
- Lettuce leaves - 2
Steps
- Heat 1 tablespoon of oil in a pan over medium heat. Add the chopped onion, garlic, and ginger, sautéing until the onion is translucent.
- Stir in the mixed vegetables and cook for about 5 minutes until they soften.
- Add the curry powder, salt, and black pepper. Mix well and cook for another 2 minutes.
- Pour in the coconut milk and let it simmer for about 5 minutes until the mixture thickens slightly.
- Remove from heat and stir in the yogurt and chopped cilantro. Let it cool slightly.
- Once cooled, add breadcrumbs to the vegetable mixture to bind it together. Form into two patties.
- Heat the remaining tablespoon of oil in a pan over medium heat. Fry the patties for 4-5 minutes on each side until golden brown.
- Toast the burger buns lightly in the same pan or a toaster.
- Assemble the burger by placing a patty on the bottom half of each bun, topping with lettuce, and then covering with the top half of the bun.
