Ingredients

  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Coconut milk - 200 ml
  • Plain yogurt - 100 grams
  • Vegetable oil - 2 tablespoons
  • Korma curry paste - 2 tablespoons
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted
  • Breadcrumbs - 50 grams
  • Cheddar cheese (grated) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the mixed vegetables and korma curry paste, cooking for about 5-7 minutes until the vegetables start to soften.
  5. Pour in the coconut milk and yogurt, stirring to combine. Season with salt and black pepper to taste, and let it simmer for 10 minutes.
  6. Remove from heat and fold in the chopped cilantro and toasted pine nuts.
  7. Transfer the vegetable korma mixture into a baking dish.
  8. In a small bowl, mix the breadcrumbs and grated cheddar cheese, then sprinkle this mixture evenly over the korma.
  9. Bake in the preheated oven for 20 minutes or until the top is golden and crispy.
  10. Remove from the oven, let it cool for a few minutes, and serve warm.
