- Coconut milk - 200 ml
- Plain yogurt - 100 grams
- Vegetable oil - 2 tablespoons
- Korma curry paste - 2 tablespoons
- Cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 30 grams, toasted
- Breadcrumbs - 50 grams
- Cheddar cheese (grated) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in the mixed vegetables and korma curry paste, cooking for about 5-7 minutes until the vegetables start to soften.
- Pour in the coconut milk and yogurt, stirring to combine. Season with salt and black pepper to taste, and let it simmer for 10 minutes.
- Remove from heat and fold in the chopped cilantro and toasted pine nuts.
- Transfer the vegetable korma mixture into a baking dish.
- In a small bowl, mix the breadcrumbs and grated cheddar cheese, then sprinkle this mixture evenly over the korma.
- Bake in the preheated oven for 20 minutes or until the top is golden and crispy.
- Remove from the oven, let it cool for a few minutes, and serve warm.
