- Grated carrot - 50 grams
- Finely chopped zucchini - 50 grams
- Mashed boiled potato - 100 grams
- Chickpea flour (besan) - 30 grams
- Finely chopped onion - 30 grams
- Minced garlic - 1 clove
- Ginger paste - 1 teaspoon
- Green chili (finely chopped) - 1 small
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - 2 tablespoons
- Oil - for frying
- Tomato puree - 200 grams
- Coconut milk - 100 ml
- Garam masala - 1/2 teaspoon
Steps
- In a mixing bowl, combine grated carrot, chopped zucchini, mashed potato, chickpea flour, onion, garlic, ginger paste, green chili, coriander powder, cumin powder, turmeric powder, salt, and chopped coriander leaves.
- Mix well and form small balls (koftas) from the mixture.
- Heat oil in a frying pan over medium heat, and fry the koftas until golden brown on all sides. Remove and set aside on a paper towel to drain excess oil.
- In the same pan, add the tomato puree and cook for 5 minutes, stirring occasionally.
- Add coconut milk and bring the sauce to a gentle simmer. Stir in garam masala and adjust seasoning if necessary.
- Carefully add the fried koftas to the sauce and let them simmer for 5-7 minutes to absorb the flavors.
- Serve hot with rice or naan.
