- Basmati rice - 50 grams
- Split yellow moong dal - 50 grams
- Carrot - 1 medium, diced
- Green beans - 50 grams, chopped
- Peas - 50 grams (fresh or frozen)
- Potato - 1 small, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable broth - 750 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Rinse the basmati rice and moong dal together under cold water until the water runs clear. Drain and set aside.
- Heat the olive oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent.
- Stir in the diced carrots, potatoes, and green beans. Cook for about 5 minutes, stirring occasionally.
- Add the rinsed rice and dal to the pot, followed by turmeric powder and garam masala. Mix well to combine all ingredients.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice and dal are cooked through and soft.
- Season with salt and black pepper to taste. If the soup is too thick, add more broth or water to reach desired consistency.
- Serve hot, garnished with fresh coriander.
