Ingredients

  • Basmati rice - 50 grams
  • Split yellow moong dal - 50 grams
  • Carrot - 1 medium, diced
  • Green beans - 50 grams, chopped
  • Peas - 50 grams (fresh or frozen)
  • Potato - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable broth - 750 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Rinse the basmati rice and moong dal together under cold water until the water runs clear. Drain and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent.
  4. Stir in the diced carrots, potatoes, and green beans. Cook for about 5 minutes, stirring occasionally.
  5. Add the rinsed rice and dal to the pot, followed by turmeric powder and garam masala. Mix well to combine all ingredients.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice and dal are cooked through and soft.
  7. Season with salt and black pepper to taste. If the soup is too thick, add more broth or water to reach desired consistency.
  8. Serve hot, garnished with fresh coriander.
