Ingredients

  • Basmati rice - 100 grams
  • Moong dal (split green gram) - 100 grams
  • Mixed vegetables (carrots, peas, and green beans) - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil (or ghee) - 1 tablespoon
  • Water - 3 cups
  • Fresh coriander leaves - for garnishing

Steps

  1. Rinse the basmati rice and moong dal under cold water until the water runs clear. Soak them together in water for 20 minutes, then drain.
  2. In a large pot, heat oil or ghee over medium heat. Add cumin seeds and mustard seeds, allowing them to splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Cook for another 2 minutes until fragrant.
  5. Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Incorporate the mixed vegetables, drained rice, and moong dal into the pot and stir well.
  7. Pour in 3 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice and dal are cooked and the water is absorbed.
  8. Sprinkle garam masala over the khichdi, mix gently, and let it rest for 5 minutes.
  9. Serve hot, garnished with fresh coriander leaves.
