Vegetable Khichdi

Ingredients
- Basmati rice - 100 grams
- Split yellow moong dal - 50 grams
- Mixed vegetables (carrots, peas, beans) - 150 grams, chopped
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Ghee or oil - 2 tablespoons
- Salt - to taste
- Water - 500 milliliters
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice and split yellow moong dal under cold water until the water runs clear, then soak them together for 15 minutes.
- In a pressure cooker or a pot, heat ghee or oil over medium heat and add the cumin seeds. Once they start to splutter, add the chopped onion and sauté until translucent.
- Add the grated ginger and slit green chili to the pot, and sauté for another minute until fragrant.
- Stir in the mixed chopped vegetables and sauté for 3-4 minutes until they start to soften.
- Add the soaked rice and dal mixture to the pot along with turmeric powder and salt. Mix well to combine all the ingredients.
- Pour in 500 milliliters of water and stir once. If using a pressure cooker, close the lid and cook for 2 whistles. If using a pot, cover and cook on low heat for about 20 minutes or until the rice and dal are soft and cooked through.
- Once done, release the pressure if using a cooker, or remove from heat and let it sit covered for 5 minutes if using a pot.
- Fluff the khichdi gently with a fork, garnish with fresh coriander leaves, and serve hot.
