Ingredients

  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 100 grams, quartered
  • Carrot - 1 medium, grated
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Chickpea flour - 50 grams
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a large bowl, combine the diced bell pepper, zucchini, mushrooms, grated carrot, and diced red onion.
  2. Add the minced garlic, grated ginger, chickpea flour, cumin powder, coriander powder, turmeric powder, garam masala, salt, and black pepper to the vegetables.
  3. Mix in the chopped fresh coriander, olive oil, and lemon juice. Stir well to coat all the vegetables evenly.
  4. Preheat a grill or grill pan over medium heat.
  5. Thread the vegetable mixture onto the skewers, packing them tightly but not overcrowding.
  6. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove the kebabs from the grill and let them cool for a minute before serving.
