- Chickpea flour - 50 grams
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- In a large bowl, combine the diced bell pepper, zucchini, mushrooms, grated carrot, and diced red onion.
- Add the minced garlic, grated ginger, chickpea flour, cumin powder, coriander powder, turmeric powder, garam masala, salt, and black pepper to the vegetables.
- Mix in the chopped fresh coriander, olive oil, and lemon juice. Stir well to coat all the vegetables evenly.
- Preheat a grill or grill pan over medium heat.
- Thread the vegetable mixture onto the skewers, packing them tightly but not overcrowding.
- Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the kebabs from the grill and let them cool for a minute before serving.
