- Whole wheat flour - 1 cup
- Water - 1/3 cup
- Salt - 1/2 teaspoon
- Oil - 1 tablespoon (for dough)

- Onion - 1 medium, thinly sliced
- Bell pepper - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Cabbage - 1 cup, thinly sliced
- Green peas - 1/2 cup (fresh or frozen)
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/4 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Green chutney - for serving (optional)
Steps
- In a bowl, mix whole wheat flour, salt, and 1 tablespoon of oil. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.
- In a large pan, heat 2 tablespoons of oil over medium heat. Add sliced onions and sauté until translucent.
- Add grated ginger and minced garlic, and cook for 1-2 minutes until fragrant.
- Stir in sliced bell pepper, carrot, cabbage, and green peas. Sauté for about 5-7 minutes until vegetables are tender.
- Add turmeric powder, cumin powder, coriander powder, garam masala, and salt to taste. Mix well and cook for another 2 minutes.
- Remove from heat and stir in lemon juice and chopped cilantro. Let the filling cool slightly.
- Divide the dough into two equal portions and roll each into a thin circle (approximately 8 inches in diameter).
- Heat a tava or non-stick pan over medium heat. Cook each roti for 1-2 minutes on each side until lightly browned.
- Place a roti on a flat surface, add a generous amount of the vegetable filling in the center, and roll it tightly. Repeat with the second roti.
- Serve warm with green chutney on the side.
