- Green chili - 1, slit
- Kadai masala (coriander seeds, cumin seeds, fennel seeds) - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a kadai or deep pan over medium heat.
- Add finely chopped onions and sauté until golden brown.
- Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
- Add the pureed tomato, turmeric powder, red chili powder, and salt, cooking until the oil separates from the mixture.
- In a separate pan, dry roast the kadai masala spices until fragrant, then grind them to a coarse powder.
- Add the mixed vegetables to the tomato gravy and cook for about 5-7 minutes until they are tender.
- Sprinkle the roasted kadai masala and garam masala over the vegetables, mixing well.
- Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves before serving.
