Ingredients

  • Mixed vegetables (bell peppers, carrots, beans, peas) - 300 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Kadai masala (coriander seeds, cumin seeds, fennel seeds) - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a kadai or deep pan over medium heat.
  2. Add finely chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  4. Add the pureed tomato, turmeric powder, red chili powder, and salt, cooking until the oil separates from the mixture.
  5. In a separate pan, dry roast the kadai masala spices until fragrant, then grind them to a coarse powder.
  6. Add the mixed vegetables to the tomato gravy and cook for about 5-7 minutes until they are tender.
  7. Sprinkle the roasted kadai masala and garam masala over the vegetables, mixing well.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  9. Garnish with fresh coriander leaves before serving.
