  • Green chili - 1, slit (adjust to taste)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the sliced onions and sauté until they are translucent.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens.
  5. Incorporate the turmeric powder, coriander powder, and salt, stirring well to combine.
  6. Add the bell pepper, carrot, green beans, and zucchini to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  7. Sprinkle the garam masala over the vegetables and mix well, cooking for an additional 2 minutes.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
