- Green chili - 1, slit (adjust to taste)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat the oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they are translucent.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
- Add the chopped tomato and cook until it softens.
- Incorporate the turmeric powder, coriander powder, and salt, stirring well to combine.
- Add the bell pepper, carrot, green beans, and zucchini to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Sprinkle the garam masala over the vegetables and mix well, cooking for an additional 2 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
