- Chickpea flour - 100 grams
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated
- Spinach - 50 grams, chopped
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 100 ml
- Oil - for shallow frying
Steps
- In a mixing bowl, combine chickpea flour, grated carrot, grated zucchini, chopped spinach, finely chopped onion, green chili, coriander leaves, cumin powder, turmeric powder, and salt.
- Gradually add water to the mixture and stir until you achieve a thick batter consistency.
- Heat a non-stick pan over medium heat and add enough oil to shallow fry the fritters.
- Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the fritters and place them on paper towels to absorb excess oil.
- Serve hot with mint chutney or ketchup.
