Ingredients

  • Chickpea flour - 100 grams
  • Carrot - 1 medium, grated
  • Zucchini - 1 small, grated
  • Spinach - 50 grams, chopped
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 100 ml
  • Oil - for shallow frying

Steps

  1. In a mixing bowl, combine chickpea flour, grated carrot, grated zucchini, chopped spinach, finely chopped onion, green chili, coriander leaves, cumin powder, turmeric powder, and salt.
  2. Gradually add water to the mixture and stir until you achieve a thick batter consistency.
  3. Heat a non-stick pan over medium heat and add enough oil to shallow fry the fritters.
  4. Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly.
  5. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the fritters and place them on paper towels to absorb excess oil.
  7. Serve hot with mint chutney or ketchup.
