Vegetable Dhokla

Ingredients

  • Chickpea flour (besan) - 100 grams
  • Yogurt - 50 grams
  • Water - 100 ml
  • Turmeric powder - 1/2 teaspoon
  • Eno fruit salt - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Grated ginger - 1 teaspoon
  • Finely chopped green chili - 1/2 teaspoon
  • Carrot (grated) - 1/4 cup
  • Capsicum (finely chopped) - 1/4 cup
  • Coriander leaves (chopped) - 2 tablespoons
  • Oil - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon
  • Water (for steaming) - 500 ml

Steps

  1. In a mixing bowl, combine the chickpea flour, yogurt, water, turmeric powder, and salt to form a smooth batter. Let it rest for 15-20 minutes.
  2. Add grated ginger, chopped green chili, grated carrot, chopped capsicum, and chopped coriander leaves to the batter and mix well.
  3. Grease a steaming tray or a round cake tin with a little oil.
  4. Just before steaming, add the Eno fruit salt to the batter and mix gently until it becomes frothy.
  5. Pour the batter into the greased tray and spread it evenly.
  6. In a steamer, bring water to a boil and then place the tray inside, covering it with a lid. Steam for 15-20 minutes until a toothpick inserted comes out clean.
  7. While the dhokla is steaming, heat oil in a small pan, add mustard seeds, and let them splutter. Then add sesame seeds and sauté for a minute.
  8. Once the dhokla is cooked, remove it from the steamer and pour the tempered oil mixture over it.
  9. Cut the dhokla into squares and serve warm with green chutney.
