Vegetable Dhokla
Vegetable Dhokla is a light and fluffy steamed savory cake made from fermented chickpea flour, enriched with finely chopped vegetables and seasoned with spices. This nutritious dish is not only a delightful breakfast option but also a tasty snack any time of the day.

Ingredients
- Chickpea flour (besan) - 100 grams
- Yogurt - 50 grams
- Water - 100 ml
- Turmeric powder - 1/2 teaspoon
- Eno fruit salt - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Grated ginger - 1 teaspoon
- Finely chopped green chili - 1/2 teaspoon
- Carrot (grated) - 1/4 cup
- Capsicum (finely chopped) - 1/4 cup
- Coriander leaves (chopped) - 2 tablespoons
- Oil - 1 tablespoon
- Mustard seeds - 1/2 teaspoon
- Sesame seeds - 1 tablespoon
- Water (for steaming) - 500 ml
Steps
- In a mixing bowl, combine the chickpea flour, yogurt, water, turmeric powder, and salt to form a smooth batter. Let it rest for 15-20 minutes.
- Add grated ginger, chopped green chili, grated carrot, chopped capsicum, and chopped coriander leaves to the batter and mix well.
- Grease a steaming tray or a round cake tin with a little oil.
- Just before steaming, add the Eno fruit salt to the batter and mix gently until it becomes frothy.
- Pour the batter into the greased tray and spread it evenly.
- In a steamer, bring water to a boil and then place the tray inside, covering it with a lid. Steam for 15-20 minutes until a toothpick inserted comes out clean.
- While the dhokla is steaming, heat oil in a small pan, add mustard seeds, and let them splutter. Then add sesame seeds and sauté for a minute.
- Once the dhokla is cooked, remove it from the steamer and pour the tempered oil mixture over it.
- Cut the dhokla into squares and serve warm with green chutney.
