  • Cauliflower - 200 grams, grated
  • Zucchini - 100 grams, grated
  • Carrot - 50 grams, grated
  • Green beans - 50 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Almond flour - 4 tablespoons
  • Coriander leaves - 2 tablespoons, chopped
  • Olive oil - for frying
  • Lettuce leaves - 2 for serving
  • Tomato slices - 2 for serving
  • Cucumber slices - 2 for serving
  • Green chutney - for serving

Steps

  1. In a large bowl, combine the grated cauliflower, zucchini, carrot, green beans, onion, garlic, ginger, chili powder, cumin powder, coriander powder, garam masala, salt, and black pepper.
  2. Mix well until all vegetables are coated with spices.
  3. Add almond flour to the mixture and form into two equal-sized patties.
  4. Heat olive oil in a non-stick pan over medium heat.
  5. Fry the patties for about 4-5 minutes on each side or until golden brown and crispy.
  6. Once cooked, remove the patties from the pan and place them on a paper towel to absorb excess oil.
  7. To assemble the burgers, place a lettuce leaf on a plate, top with a vegetable patty, add tomato and cucumber slices, and drizzle with green chutney before covering with another lettuce leaf.
  8. Serve immediately and enjoy your low-carb vegetable cutlet burger!
