- Cauliflower - 200 grams, grated
- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Green beans - 50 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Garam masala - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Almond flour - 4 tablespoons
- Coriander leaves - 2 tablespoons, chopped
- Olive oil - for frying
- Lettuce leaves - 2 for serving
- Tomato slices - 2 for serving
- Cucumber slices - 2 for serving
- Green chutney - for serving
Steps
- In a large bowl, combine the grated cauliflower, zucchini, carrot, green beans, onion, garlic, ginger, chili powder, cumin powder, coriander powder, garam masala, salt, and black pepper.
- Mix well until all vegetables are coated with spices.
- Add almond flour to the mixture and form into two equal-sized patties.
- Heat olive oil in a non-stick pan over medium heat.
- Fry the patties for about 4-5 minutes on each side or until golden brown and crispy.
- Once cooked, remove the patties from the pan and place them on a paper towel to absorb excess oil.
- To assemble the burgers, place a lettuce leaf on a plate, top with a vegetable patty, add tomato and cucumber slices, and drizzle with green chutney before covering with another lettuce leaf.
