- Water - 500 ml
- Mixed vegetables (carrots, beans, peas, bell peppers) - 200 grams
- Tofu, cubed - 100 grams
- Onion, finely chopped - 1 medium (100 grams)
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green chili, slit - 1
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Black pepper powder - 1/2 teaspoon
- Fresh coriander leaves, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
- Stir in the turmeric powder and slit green chili, cooking for another minute to release their flavors.
- Add the mixed vegetables and sauté for 2-3 minutes until they are slightly tender.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
- Add the cubed tofu and season with salt and black pepper. Continue to simmer for another 5 minutes.
- Remove from heat and stir in the chopped coriander leaves and lemon juice.
- Serve hot, garnished with additional coriander if desired.
