Ingredients

  • Water - 500 ml
  • Mixed vegetables (carrots, beans, peas, bell peppers) - 200 grams
  • Tofu, cubed - 100 grams
  • Onion, finely chopped - 1 medium (100 grams)
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green chili, slit - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper powder - 1/2 teaspoon
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
  3. Stir in the turmeric powder and slit green chili, cooking for another minute to release their flavors.
  4. Add the mixed vegetables and sauté for 2-3 minutes until they are slightly tender.
  5. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
  6. Add the cubed tofu and season with salt and black pepper. Continue to simmer for another 5 minutes.
  7. Remove from heat and stir in the chopped coriander leaves and lemon juice.
  8. Serve hot, garnished with additional coriander if desired.
