Ingredients

  • Mixed vegetables (carrot, beans, peas, potato) - 300 grams
  • Coconut (grated) - 50 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, minced
  • Green chili - 1, slit
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil (cooking) - 2 tablespoons
  • Salt - to taste
  • Water - 200 ml

Steps

  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add cumin seeds and curry leaves, and sauté for a minute until fragrant.
  3. Stir in the chopped onions and sauté until they turn translucent.
  4. Add minced garlic, ginger, and slit green chili. Cook for 2-3 minutes until the raw smell disappears.
  5. Add chopped tomatoes and cook until they soften, about 5 minutes.
  6. Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2 minutes to combine the spices.
  7. Add the mixed vegetables and sauté for 3-4 minutes, allowing them to absorb the flavors.
  8. Pour in water and bring the mixture to a boil. Reduce heat, cover, and simmer for 10-15 minutes until the vegetables are tender.
  9. Once the vegetables are cooked, add the grated coconut and garam masala. Mix well and cook for another 2 minutes.
  10. Remove from heat and serve hot with rice or chapati.
