Ingredients
- Mixed vegetables (carrot, beans, peas, potato) - 300 grams
- Coconut (grated) - 50 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 4 cloves, minced
- Ginger - 1-inch piece, minced
- Green chili - 1, slit
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil (cooking) - 2 tablespoons
- Salt - to taste
- Water - 200 ml
Steps
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and curry leaves, and sauté for a minute until fragrant.
- Stir in the chopped onions and sauté until they turn translucent.
- Add minced garlic, ginger, and slit green chili. Cook for 2-3 minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they soften, about 5 minutes.
- Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2 minutes to combine the spices.
- Add the mixed vegetables and sauté for 3-4 minutes, allowing them to absorb the flavors.
- Pour in water and bring the mixture to a boil. Reduce heat, cover, and simmer for 10-15 minutes until the vegetables are tender.
- Once the vegetables are cooked, add the grated coconut and garam masala. Mix well and cook for another 2 minutes.
- Remove from heat and serve hot with rice or chapati.
