- Water - 1.5 liters
- Carrot - 1 medium, chopped
- Celery - 1 stalk, chopped
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, sliced
- Tomato - 1 medium, chopped
- Green beans - 100 grams, chopped
- Peas - 100 grams, fresh or frozen
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bay leaf - 1
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- In a large pot, heat 1 tablespoon of oil over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onion, garlic, and ginger; sauté until the onion is translucent.
- Stir in the chopped carrot, celery, and tomato, cooking for 5 minutes until softened.
- Add green beans, peas, coriander powder, turmeric powder, black pepper, bay leaf, and salt.
- Pour in the water and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Strain the broth into another pot or bowl, discarding the solids.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh coriander leaves.
