Ingredients
- Basmati rice - 100 grams
- Mixed bell peppers (red, yellow, green) - 150 grams, chopped
- Zucchini - 100 grams, chopped
- Red onion - 50 grams, sliced
- Cherry tomatoes - 100 grams
- Chickpeas (cooked) - 100 grams
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add the chopped bell peppers, zucchini, and sliced red onion to the pan. Cook for about 5-7 minutes until the vegetables are slightly tender.
- Stir in the cooked chickpeas, cumin powder, coriander powder, turmeric powder, garam masala, salt, and black pepper. Cook for another 3 minutes, then remove from heat and let cool.
- In a separate pot, bring 200 ml of water to a boil. Add the soaked basmati rice, cover, and cook on low heat for about 15 minutes or until the rice is fluffy and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- Once the rice is cool enough to handle, mix it gently with the sautéed vegetable-chickpea mixture. Add chopped cilantro and lemon juice, mixing to combine thoroughly.
- Preheat the grill or BBQ to medium-high heat. Thread the vegetable-rice mixture onto the skewers, alternating with cherry tomatoes.
- Brush the assembled skewers with the remaining vegetable oil and season with salt and pepper.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are charred and cooked through.
- Serve the Vegetable Biryani Skewers hot, garnished with additional cilantro and lemon wedges if desired.
