Steps
- Cook the basmati rice according to package instructions until fluffy and set aside.
- In a pan, heat olive oil over medium heat, add cumin seeds, and let them splutter.
- Add sliced onions, and sauté until golden brown. Then add minced garlic and grated ginger, cooking for an additional minute.
- Stir in diced tomatoes, mixed vegetables, coriander powder, garam masala, turmeric powder, and salt. Cook until the vegetables are tender.
- Add the cooked rice to the vegetable mixture and stir well to combine. Remove from heat and mix in chopped cilantro and saffron strands.
- Preheat the oven to 220°C (428°F). Roll out the pizza dough on a floured surface into a 10-inch circle.
- Transfer the rolled dough to a baking tray lined with parchment paper. Spread the vegetable biryani mixture evenly over the dough.
- Sprinkle shredded mozzarella cheese generously over the top.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the cheese is bubbly.
