  • Cilantro - 2 tablespoons, chopped

  • Mozzarella cheese - 150 grams, shredded

Steps

  1. Cook the basmati rice according to package instructions until fluffy and set aside.
  2. In a pan, heat olive oil over medium heat, add cumin seeds, and let them splutter.
  3. Add sliced onions, and sauté until golden brown. Then add minced garlic and grated ginger, cooking for an additional minute.
  4. Stir in diced tomatoes, mixed vegetables, coriander powder, garam masala, turmeric powder, and salt. Cook until the vegetables are tender.
  5. Add the cooked rice to the vegetable mixture and stir well to combine. Remove from heat and mix in chopped cilantro and saffron strands.
  6. Preheat the oven to 220°C (428°F). Roll out the pizza dough on a floured surface into a 10-inch circle.
  7. Transfer the rolled dough to a baking tray lined with parchment paper. Spread the vegetable biryani mixture evenly over the dough.
  8. Sprinkle shredded mozzarella cheese generously over the top.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the cheese is bubbly.
