Ingredients

  • Basmati rice - 100 grams
  • Mixed vegetables (carrots, peas, bell peppers) - 150 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped (optional)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Chickpea flour (besan) - 2 tablespoons
  • Rice flour - 2 tablespoons
  • Water - as needed
  • Oil - for frying

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, cook the soaked rice with 200 ml of water and a pinch of salt until fluffy. Allow to cool.
  3. In a skillet, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions, garlic, ginger, and green chili. Sauté until the onions are translucent.
  5. Stir in the mixed vegetables and cook for 5-7 minutes until tender. Add coriander powder, garam masala, and salt. Mix well and remove from heat.
  6. In a large bowl, combine the cooled rice, sautéed vegetable mixture, and chopped coriander leaves. Mix gently.
  7. Add chickpea flour and rice flour to the mixture. If needed, add water, a little at a time, to help bind the mixture together.
  8. Form the mixture into small balls, about the size of a golf ball.
  9. In a deep pan, heat oil for frying over medium heat. Once hot, carefully add the balls in batches and fry until golden brown and crispy, about 5-7 minutes.
  10. Remove the balls with a slotted spoon and drain on paper towels. Serve hot with mint chutney or tomato ketchup.
