Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Coconut oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Tomato puree - 200 grams
  • Apple cider vinegar - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Vindaloo spice blend - 2 tablespoons
  • Vegetable broth - 240 ml
  • Cauliflower - 200 grams, cut into florets
  • Bell pepper - 1 medium, sliced
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Cilantro - for garnish

Steps

  1. In a large pan, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.
  3. Add the Vindaloo spice blend to the pan, stirring well to coat the onions, garlic, and ginger. Cook for 1-2 minutes to release the spices' aroma.
  4. Pour in the tomato puree, apple cider vinegar, and brown sugar. Mix until well combined and let it simmer for 3-4 minutes.
  5. Add the vegetable broth, chickpeas, cauliflower florets, and sliced bell pepper to the pan. Stir everything together and bring to a boil.
  6. Reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the cauliflower is tender.
  7. In the last 5 minutes of cooking, add the fresh spinach and stir until wilted. Season with salt to taste.
  8. Serve hot, garnished with fresh cilantro.
