- Chickpeas - 240 grams (1 can, drained and rinsed)
- Coconut oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Tomato puree - 200 grams
- Apple cider vinegar - 2 tablespoons
- Brown sugar - 1 tablespoon
- Vindaloo spice blend - 2 tablespoons
- Vegetable broth - 240 ml
- Cauliflower - 200 grams, cut into florets
- Bell pepper - 1 medium, sliced
- Spinach - 100 grams, fresh
- Salt - to taste
- Cilantro - for garnish
Steps
- In a large pan, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.
- Add the Vindaloo spice blend to the pan, stirring well to coat the onions, garlic, and ginger. Cook for 1-2 minutes to release the spices' aroma.
- Pour in the tomato puree, apple cider vinegar, and brown sugar. Mix until well combined and let it simmer for 3-4 minutes.
- Add the vegetable broth, chickpeas, cauliflower florets, and sliced bell pepper to the pan. Stir everything together and bring to a boil.
- Reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the cauliflower is tender.
- In the last 5 minutes of cooking, add the fresh spinach and stir until wilted. Season with salt to taste.
- Serve hot, garnished with fresh cilantro.
