- Red onion - 1 medium, cut into wedges
- Mushrooms - 200 grams, halved
- Cauliflower - 200 grams, cut into florets
- Firm tofu - 200 grams, cubed
- Soy yogurt - 150 grams
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a large mixing bowl, combine the soy yogurt, minced garlic, grated ginger, lemon juice, ground cumin, ground coriander, garam masala, turmeric powder, red chili powder, and salt. Mix well to create the marinade.
- Add the chopped bell pepper, zucchini, red onion, mushrooms, cauliflower, and cubed tofu to the marinade. Toss until the vegetables and tofu are well-coated. Cover and let it marinate in the refrigerator for at least 20 minutes.
- Preheat a grill or grill pan over medium-high heat. Lightly brush the grill with olive oil to prevent sticking.
- Thread the marinated vegetables and tofu onto skewers, alternating between the different types of vegetables and tofu pieces.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and let cool slightly. Garnish with fresh cilantro before serving.
