Ingredients
- Spinach - 200 grams
- Tofu - 150 grams, firm
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Tomato - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Carrot - 1 medium, diced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Coconut milk - 100 ml
- Oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn translucent, about 5 minutes.
- Stir in minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- Add diced tomatoes, turmeric powder, and salt. Cook until the tomatoes soften, about 5 minutes.
- Incorporate the diced carrot and green peas, and sauté for another 5 minutes until the vegetables are tender.
- While the vegetables are cooking, blanch the spinach in boiling water for 2 minutes, then drain and rinse under cold water. Squeeze out excess water and chop roughly.
- Add the chopped spinach to the vegetable mixture, stirring well to combine.
- Crumble the firm tofu into the pan and gently fold it into the mixture.
- Pour in the coconut milk, add garam masala, and mix everything together. Cook for another 5 minutes on low heat.
- Adjust seasoning with black pepper and add lemon juice before serving.
