Ingredients

  • Spinach - 200 grams
  • Tofu - 150 grams, firm
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Tomato - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Carrot - 1 medium, diced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Coconut milk - 100 ml
  • Oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  4. Add diced tomatoes, turmeric powder, and salt. Cook until the tomatoes soften, about 5 minutes.
  5. Incorporate the diced carrot and green peas, and sauté for another 5 minutes until the vegetables are tender.
  6. While the vegetables are cooking, blanch the spinach in boiling water for 2 minutes, then drain and rinse under cold water. Squeeze out excess water and chop roughly.
  7. Add the chopped spinach to the vegetable mixture, stirring well to combine.
  8. Crumble the firm tofu into the pan and gently fold it into the mixture.
  9. Pour in the coconut milk, add garam masala, and mix everything together. Cook for another 5 minutes on low heat.
  10. Adjust seasoning with black pepper and add lemon juice before serving.
