Ingredients

  • Whole wheat flour - 150 grams
  • Warm water - 60 ml
  • Salt - 1/2 teaspoon
  • Oil (for dough) - 1 tablespoon
  • Vegetable oil (for frying) - 500 ml
  • Potato (boiled and mashed) - 100 grams
  • Carrot (grated) - 50 grams
  • Green peas (fresh or frozen) - 50 grams
  • Onion (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine whole wheat flour and salt. Add 1 tablespoon of oil and mix well.
  2. Gradually add warm water to the flour mixture, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 15 minutes.
  3. In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onion and grated ginger. Sauté until the onion turns translucent.
  5. Stir in the grated carrot, green peas, mashed potato, turmeric powder, coriander powder, and garam masala. Cook for about 5-7 minutes until the vegetables are tender.
  6. Add chopped cilantro and lemon juice to the vegetable mixture, stir well, and remove from heat.
  7. Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a small circle (about 10 cm in diameter) using a rolling pin.
  8. Heat vegetable oil in a deep pan on medium-high heat. Once hot, carefully slide in one puri at a time.
  9. Fry until the puri puffs up and turns golden brown, about 30 seconds on each side. Remove with a slotted spoon and drain on paper towels.
  10. Serve the hot puris with the vegetable filling on the side, allowing everyone to fill their puris as desired.
