Ingredients
- Whole wheat flour - 150 grams
- Warm water - 60 ml
- Salt - 1/2 teaspoon
- Oil (for dough) - 1 tablespoon
- Vegetable oil (for frying) - 500 ml
- Potato (boiled and mashed) - 100 grams
- Carrot (grated) - 50 grams
- Green peas (fresh or frozen) - 50 grams
- Onion (finely chopped) - 1 small
- Ginger (grated) - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine whole wheat flour and salt. Add 1 tablespoon of oil and mix well.
- Gradually add warm water to the flour mixture, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 15 minutes.
- In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and grated ginger. Sauté until the onion turns translucent.
- Stir in the grated carrot, green peas, mashed potato, turmeric powder, coriander powder, and garam masala. Cook for about 5-7 minutes until the vegetables are tender.
- Add chopped cilantro and lemon juice to the vegetable mixture, stir well, and remove from heat.
- Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a small circle (about 10 cm in diameter) using a rolling pin.
- Heat vegetable oil in a deep pan on medium-high heat. Once hot, carefully slide in one puri at a time.
- Fry until the puri puffs up and turns golden brown, about 30 seconds on each side. Remove with a slotted spoon and drain on paper towels.
- Serve the hot puris with the vegetable filling on the side, allowing everyone to fill their puris as desired.
