Ingredients

  • Green gram lentils (moong dal) - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Spinach - 1/2 cup, chopped (30g)
  • Carrot - 1/2, grated (50g)
  • Onion - 1/2, finely chopped (75g)
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Oil - for cooking (coconut or vegetable oil)

Steps

  1. Rinse the green gram lentils thoroughly under cold water and soak them in water for at least 4 hours or overnight.
  2. After soaking, drain the lentils and transfer them to a blender. Add 1.5 cups of water, cumin seeds, and salt, and blend until you have a smooth batter.
  3. In a mixing bowl, combine the blended batter with chopped spinach, grated carrot, chopped onion, green chili, and grated ginger. Mix well to evenly distribute the vegetables.
  4. Heat a non-stick skillet or tava over medium heat and drizzle a little oil to coat the surface.
  5. Pour a ladleful of the batter onto the skillet and spread it gently into a circular shape, about 1/4 inch thick.
  6. Drizzle a little oil around the edges of the dosa and cook for 3-4 minutes until the bottom is golden brown. Flip and cook for another 2-3 minutes on the other side.
  7. Remove the dosa from the skillet and repeat the process with the remaining batter, adding more oil as needed.
  8. Serve hot with coconut chutney or sambar.
