- Semolina - 100 grams
- All-purpose flour - 50 grams
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Water - as needed
- Oil - for frying
- Boiled potatoes - 100 grams, mashed
- Chickpeas - 50 grams, boiled
- Onion - 1 small, finely chopped
- Tomato - 1 small, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Green chili - 1, finely chopped
- Chaat masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Tamarind paste - 2 tablespoons
- Cilantro-mint chutney - 2 tablespoons
- Water - 500 ml (for pani)
Steps
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water until a smooth dough forms. Cover and let it rest for 20 minutes.
- Meanwhile, prepare the filling by mixing boiled potatoes, chickpeas, onion, tomato, coriander leaves, green chili, chaat masala, and cumin powder in a bowl. Adjust seasoning if necessary.
- After resting, take small portions of the dough and roll them into balls. Roll each ball into thin discs (about 3 inches in diameter).
- Heat oil in a deep pan over medium heat. Once hot, gently slide in the puris, frying them until they puff up and turn golden brown. Remove and drain on paper towels.
- For the pani, mix tamarind paste, cilantro-mint chutney, and 500 ml of water in a bowl. Adjust spice levels as per taste.
- To serve, make a small hole in the top of each puri and stuff it with the vegetable filling. Dip it into the prepared pani and enjoy immediately.
