Ingredients

  • Chickpea flour - 100 grams
  • Water - 150 ml
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Cauliflower florets - 100 grams
  • Carrot - 1 medium, grated
  • Potato - 1 medium, thinly sliced
  • Spinach leaves - 50 grams, chopped
  • Onion - 1 small, thinly sliced
  • Fresh coriander - 2 tablespoons, chopped
  • Cooking oil - for deep frying

Steps

  1. In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, and salt to form a smooth batter.
  2. Add the cauliflower florets, grated carrot, sliced potato, chopped spinach, sliced onion, and chopped coriander to the batter, mixing until the vegetables are well coated.
  3. Heat oil in a deep frying pan over medium heat. To test the oil, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  4. Using a spoon or your hands, drop spoonfuls of the vegetable mixture into the hot oil, being careful not to overcrowd the pan.
  5. Fry the pakoras for about 4-5 minutes, or until they are golden brown and crispy, turning occasionally for even cooking.
  6. Once cooked, remove the pakoras from the oil using a slotted spoon and drain on paper towels to remove excess oil.
  7. Serve hot with chutney or sauce of your choice.
