- Chickpea flour - 100 grams
- Water - 150 ml
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Cauliflower florets - 100 grams
- Carrot - 1 medium, grated
- Potato - 1 medium, thinly sliced
- Spinach leaves - 50 grams, chopped
- Onion - 1 small, thinly sliced
- Fresh coriander - 2 tablespoons, chopped
- Cooking oil - for deep frying
Steps
- In a mixing bowl, combine chickpea flour, water, cumin seeds, turmeric powder, red chili powder, and salt to form a smooth batter.
- Add the cauliflower florets, grated carrot, sliced potato, chopped spinach, sliced onion, and chopped coriander to the batter, mixing until the vegetables are well coated.
- Heat oil in a deep frying pan over medium heat. To test the oil, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Using a spoon or your hands, drop spoonfuls of the vegetable mixture into the hot oil, being careful not to overcrowd the pan.
- Fry the pakoras for about 4-5 minutes, or until they are golden brown and crispy, turning occasionally for even cooking.
- Once cooked, remove the pakoras from the oil using a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot with chutney or sauce of your choice.
