Ingredients

  • Ginger - 1 tablespoon, grated
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Cauliflower - 200 grams, cut into florets
  • Green peas - 100 grams, fresh or frozen
  • Tomato - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Nihari spice mix - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.
  2. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  3. Add the diced carrot, potato, cauliflower florets, and green peas. Sauté for about 5 minutes, stirring occasionally.
  4. Add the chopped tomato and cook until softened, about 3-4 minutes.
  5. Stir in the Nihari spice mix, salt, and black pepper, cooking for an additional minute to toast the spices.
  6. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 25-30 minutes until the vegetables are tender.
  7. Adjust seasoning to taste. If you prefer a thicker consistency, mash some of the vegetables with the back of a spoon.
  8. Serve hot, garnished with fresh cilantro, alongside naan or rice.
