- Potato - 1 medium, diced
- Cauliflower - 200 grams, cut into florets
- Green peas - 100 grams, fresh or frozen
- Tomato - 1 medium, chopped
- Vegetable broth - 500 ml
- Nihari spice mix - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- Add the diced carrot, potato, cauliflower florets, and green peas. Sauté for about 5 minutes, stirring occasionally.
- Add the chopped tomato and cook until softened, about 3-4 minutes.
- Stir in the Nihari spice mix, salt, and black pepper, cooking for an additional minute to toast the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 25-30 minutes until the vegetables are tender.
- Adjust seasoning to taste. If you prefer a thicker consistency, mash some of the vegetables with the back of a spoon.
- Serve hot, garnished with fresh cilantro, alongside naan or rice.
