Ingredients

  • Basmati rice - 100 grams
  • Yellow split moong dal - 50 grams
  • Carrot - 1 medium, diced
  • Green peas - 50 grams (fresh or frozen)
  • Potato - 1 medium, diced
  • Cauliflower florets - 100 grams
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon
  • Water - 600 milliliters
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice and yellow moong dal together under running water until the water runs clear. Drain and set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add cumin seeds and mustard seeds, and sauté until they start to crackle.
  3. Add the chopped onion, ginger, and garlic to the pot. Sauté until the onion becomes translucent.
  4. Stir in the diced carrot, potato, cauliflower, and green peas. Cook for about 5 minutes, stirring occasionally.
  5. Add the chopped tomato, turmeric powder, salt, and black pepper. Cook until the tomato softens, about 3-4 minutes.
  6. Add the rinsed rice and moong dal to the pot. Stir well to combine all ingredients.
  7. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice and dal are cooked and the water is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. Garnish with fresh coriander leaves and serve hot.
