- Basmati rice - 100 grams
- Yellow split moong dal - 50 grams
- Carrot - 1 medium, diced
- Green peas - 50 grams (fresh or frozen)
- Potato - 1 medium, diced
- Cauliflower florets - 100 grams
- Onion - 1 small, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - 1 tablespoon
- Water - 600 milliliters
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice and yellow moong dal together under running water until the water runs clear. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add cumin seeds and mustard seeds, and sauté until they start to crackle.
- Add the chopped onion, ginger, and garlic to the pot. Sauté until the onion becomes translucent.
- Stir in the diced carrot, potato, cauliflower, and green peas. Cook for about 5 minutes, stirring occasionally.
- Add the chopped tomato, turmeric powder, salt, and black pepper. Cook until the tomato softens, about 3-4 minutes.
- Add the rinsed rice and moong dal to the pot. Stir well to combine all ingredients.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice and dal are cooked and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Garnish with fresh coriander leaves and serve hot.
