Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (plus more as needed)
  • Salt - 1/4 teaspoon
  • Oil - 1 tablespoon (for dough)
  • Mixed vegetables (bell pepper, carrot, onion, peas) - 1 cup (finely chopped)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon (for filling)
  • Cilantro - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon (for cooking)
  • Vegan yogurt - 4 tablespoons (for serving)

Steps

  1. In a bowl, mix whole wheat flour, 1/4 teaspoon salt, and 1 tablespoon oil. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.
  2. In a pan, heat 1 tablespoon oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped mixed vegetables, turmeric powder, red chili powder, and 1/2 teaspoon salt. Sauté for about 5-7 minutes until the vegetables are tender.
  4. Stir in garam masala, chopped cilantro, and lemon juice. Mix well and cook for 2 more minutes. Remove from heat and set aside.
  5. Divide the dough into two equal portions and roll each into a ball. Roll out each ball into a thin circle (about 8 inches in diameter).
  6. Heat a skillet over medium heat and cook each rolled paratha until light brown spots form on both sides, about 2-3 minutes per side. Remove and keep warm.
  7. To assemble, place a portion of the vegetable filling on one side of the paratha. Roll it tightly to enclose the filling. Repeat with the second paratha.
  8. Serve warm with vegan yogurt on the side.
